This is more of a side dish than a main dish. We ate ours with soup. Not meant to be a meal by itself. (This yields 20-24 muffins depending on how full you fill the muffin cups. I gave each family 22 muffins)
1.5 cup flour
1.5 tsp baking powder
1 tsp dried oregano
8 oz mozzarella cheese, shredded
8 oz turkey pepperoni, diced
1.5 cup milk, 2%
2 eggs, lightly beaten
1 cup pizza sauce
Preheat oven to 375 degrees. Grease muffin pan. In a large bowl, whisk
together the flour, baking powder and oregano. Whisk in the milk and
egg. Stir in the mozzarella and pepperoni and let stand for a few
Stir the batter and divide evenly among the muffin cups. Bake until
puffed and golden, about 18 to 23 minutes.

To prepare from frozen, microwave in 30 second intervals to reheat!
